World Sushi Skills Institute Seminar 2025 heads to Manila

MANILA, Philippines – Calling all sushi lovers and aspiring chefs! The World Sushi Skills Institute Seminar 2025 is currently in Manila, running from February 5 to 7 at Enderun College.

Hosted by Japan External Trade Organization (JETRO), in collaboration with Sanriku and Hightower Incorporated, the seminar is all about sharpening sushi-making skills and deepening appreciation for authentic Japanese cuisine.

At the helm is Chef Hirotoshi Ogawa, a globally recognized sushi master and director general of the World Sushi Skills Institute. With over 30 years of experience, he has promoted Japanese cuisine in 40+ countries, served as a culinary advisor to the Japanese government, and founded Ogawa Sushi in Tokyo.

Participants will dive into classroom lectures and hands-on training, mastering the art of sushi; from cooking the perfect rice and precision knife work to preparing fish and sophisticated sushi. Food safety and international sushi standards will also be taught.

With only 20 slots available per day, the seminar offers personalized instruction at Enderun College’s Culinary Amphitheater and Kitchen Laboratory, from 1 pm to 6 pm. The program will end with a written exam, and successful participants will earn the prestigious Sushi Proficiency Certificate from the World Sushi Skills Institute.

PARTICIPANTS are required to complete a written exam to receive the certificate.

The seminar is part of JETRO’s Japanese seafood campaign, which highlights Japan’s time-honored culinary traditions in the Philippines.
